Sunday dinner
If you really want to rebel against society, try unplugging from big agribusiness and eat a diet largely free of processed foods. Stick it to the man and get healthier all at the same time. What could be more lefty friendly?
Dr. Prole's Sunday Dinner
2 skinless boneless chicken breasts, the highest quality you can afford, cut into bite size pieces.
1/2 head of broccoli cut into florets and blanched for 2 minutes, then plunged into cold water
1 bunch kale, sliced thin and rinsed well, but don't shake most of the water off
1 1/2 tbs sesame seeds
1 can sliced water chestnuts
4 cloves garlic, pureed
2 inch piece ginger, pureed
2 tbs coconut oil, divided
Crushed red pepper to taste (I start with a pinch, just for a little bit of heat)
Himalayan sea salt to taste, soy sauce or chili garlic sauce if you like as condiment
Get 2 big frying pans. Heat one of them at medium and put 1 tbs of coconut oil in. When oil is hot add chicken and brown. Add garlic and ginger and fry gently, mixing with chicken. Add water chestnut; stir fry.
Heat another big frying pan. When oil is hot, fry sesame seeds, stirring almost constantly for a few minutes until they are golden and fragrant. Add rinsed kale to pan and toss with wooden spoons to coat. Sprinkle with a few more tbs. water if needed. Cover when they start to cook down and continue to toss occasionally. Be sure not to burn.
Back at the chicken pan, when water chestnuts are heated through, add blanched broccoli and mix; heat through.
When kale is nice and wilty, it's done. Your chicken stir fry is done. Serve to appreciative partner/family.
